Healing Minestrone Soup

Yesterday before lock down set in here in Victoria, my family and I enjoyed a surf and picnic lunch on the beach in the divine sunshine. What an incredible winter we have had, full of so many sunny warm days.
This minestrone soup is grain and dairy free and perfect for a warm winters lunch. It is very simple to create- you can even use what ever vegetables you have in your fridge to put your unique spin on it. It’s anti-inflammatory, gut healing, great for your microbiome and full of beneficial nutrients.
Getting into the kitchen and cooking your own food is one of the best things you can do for your family’s health and it’s such a privilege too. Happy cooking!!
Healing Minestrone Soup

Equipment
big pot the lid
Ingredients
1 tbsp olive oil extra virgin
1/2 large red onion diced finely
2 garlic cloves crushed
3 celery stalks diced finely
3-4 fresh tomatoes diced finely or blended up
4 small potatoes peeled and diced into cubes
1 small sweet potato peeled and diced into cubes
1-2 cups kale diced finely
1 tin tin of: organic 4 bean mix strained and rinsed well
4 cups organic bone broth or vegetable stock plus extra water as needed
2 tsp real salt- rock or sea season to your taste
1/2 tsp turmeric powder
Instructions
Peel, dice and slice all ingredients and set them aside (keep onion and garlic separate).
Gently fry the onion and garlic until translucent.
Add broth, remaining vegetables and turmeric. Add any extra water needed to cover the vegetables completely.
Simmer until the vegetables are cooked and the potatoes are soft.
Mix through the beans and cook until they are hot.
Season with salt to taste.
Stir through the parsley just before serving or use it as a garnish.
