Incredible Sapote Pudding

Each week, the kids and I have a pact that we will try a different plant food. Some weeks, especially in winter, it is a struggle to find a new one. Today we hit the jackpot with the amazing Sapote!
We do this because the wider the variety of plant foods that you include into your diet, the greater the diversity of bacteria that will be fed, thrive and be happy. Good diversity = better health. Win win.
The good old peas and corn for dinner every night, just doesn’t cut it!
After trying this dish, I must say this uncommon and unusual tropical fruit is now one of my favourites. It was an incredible surprise. An added bonus is that it is nutrient dense containing, fiber, vitamins A, B3 and C, copper and magnesium, B6, folate, pantothenic acid, iron and potassium.
Getting into the kitchen and cooking your own food is the best thing you can do for your family’s health and it’s such a privilege too. Happy cooking!!

Equipment
Food processor or fork
Ingredients
1 ripe Sapote It's extremely soft when it's ready
1 tsp cacao powder
1 tsp honey
1/2 tsp vanilla powder
1 tbsp coconut cream
Instructions
Place all ingredients into a food processor and blitz until smooth.
Enjoy straight away.
